Long Jing is considered to be one of the top 10 teas in China. There are five core tea garden areas around the West Lake in Hangzhou which produce the best quality Long Jing green tea. The Long Jing is produced in Shi Feng (Lion Peak), one and the best of five core tea garden areas. This Long Jing's tea leaves were picked before 谷雨 (Gu Yu, solar term), and were handmade by experienced tea craftsmen. 

This premium-grade Long Jing has nodes containing one bud and two to three young leaves, dark yellow-green in color. The tea has a very strong and remarkable Long Jing fragrance and taste. In Chinese tea culture, people usually compare the fragrance of Long Jing to Chao Lan Hua Dou (炒兰花豆, a fried broad bean snack), and this Long Jing exhibits this fragrance strongly.

  • Regular way

    • Glass
    • 4 grams for an 8oz/250ml glass
    • 185℉ / 85℃
    • 2 - 3 mins, 3 steeps
    • Fill 1/3 of the glass with water, then put the tea into the glass. Spin the glass gently to wet all the tea leaves, then pour more of the water in to fill the glass. 

     

    Chinese Gongfu way

    • Porcelain Gaiwan
    • 4 grams for an 120ml gaiwan
    • 185℉ / 85℃
    • 4 steeps: 30s/30s/40s/60s
    • Fill 1/3 of the gaiwan with water first, then put the tea into the gaiwan. Spin the gaiwan gently to wet all of the tea leaves, then pour more of the water in to fill the gaiwan. 
    • Do not cover the lid
